I have a guitar with which recently had a fret dressing from a local luthier, the frets seem level now (although not crowned sooo much..maybe because there isnt so much height left).
You could always sand the fret ends until they don't cut your fingers any more. Use painter's tape so as not to scratch your fretboard while your at it.

I doubt extra glue would have any sonic impact but if it were me I would've used a shim to keep the nut level or something like that. Normally you would sand off the old glue before you change a nut I'm not sure why he wouldn't do this. It kinda sounds to me like you should take it to another luthier for a different opinion.

I got him to use sandpaper and sand the fret edges what he could, but since they are lifted they still act like a blunt knife when doing slides/wrapped thumb technique.

Is this guitar special to you? If so you might consider a re-fret as long as the price is justifiable. I just took another look those frets are pretty rough looking.

Regarding the nut, you could always use wood filler to even the surface again and sand down the nut as required. When wood filler cures its really strong but sands easy. I've done this before on an older guitar with great results!
The guitar is very nice apart from these issues, so i want to salvage it. He quoted me about £240 for a full refret, which was steep so i went for the fret dress at about £95, which i have already sunk now...so a refret would be even steeper now xD.

They might could be tapped down and glued, but then you'll have to have the frets dressed again. I don't really think you got a pro job on the fret dress, so a refret would be a good alternative if it's a guitar that's worth it to you.
The limiting factor in whether or not frets are too worn to dress/level is that there be sufficient crown height to be able to properly recrown them after leveling. If there isn’t, dressing/leveling isn’t a viable option and, I would expect any skilled professional to know that.

A prerequisite for levelling frets is that they are fully seated and non-moving. If they are not, attempting to level them is not going to yield good results.
Is the gunk on the fingerboard the way you recieved the guitar after the work was done? No fingerboard should be left looking like that after any fret work is done. Removing the gunk takes 5 minutes or less.
I never noticed the first time that you had a pic linked showing your nut slot (which I just viewed). Please tell me he didn't just glue a new nut on top of that mess. If he did that coupled with the horrible fret mess I would be going back there and getting my money back and taking the guitar to someone who is actually interested in fixing it properly.

He already is saying he cut me some slack for other work i paid seperately (soundport etc) so i dont think i would get anywhere here :/.
Hm i i going to collect the guitar again today after getting him to work on it more (crown more, remove filing marks etc). If it plays nicely ill stick to it as it is for a while because a refret is a lot of money after just spending so much on the guitar.

I did ask quite a lot of questions initially based on the things you posed here, but he was saying there wasnt anything he could do about the fret ends, the frets were already leveled, so not much i could do (as they were short itself). He did suggest a refret but the cost was limiting so we went down the dressing route.
The photo is after i received the guitar from him from fret dressing, I was a bit disappointed he didn't clean the gunk either, but i thought i will just clean the guitar up myself after all the work is done.

He didn't glue the new nut, he replaced the old nut with a new bone one, and it was held in place by string pressure (which is ok). I only noticed the glue as i decided to take a look at the base of the nut myself to check if he had made it flat.

What exactly did he do to the frets that made them lift like that. If you level the frets, you don't remove them. Either he did something he should not have, or they were like that before. The ends of the fret dressing look odd also.
You need a new repair tech. I can tell you from my 25 years experience doing this sort of thing that 1) I could have that glue at the nut location removed in 5 minutes with a chisel and 2) if fret ends are sticking up they can always be set back properly.

It's hard to tell if those fret ends are actually sticking up or just not dressed properly or both. But in any fret dressing you get done the fret ends should be meticulously taken care of. There are special tools to do this job but it doesn't even look like your guy hit them with a simple piece of sand paper which would get you 90% of the way there.
